While he was anxious to return, he would only do so if the property was right. Having sampled quite a few of the tasty items at Blu Mussel Tavern, I can personally vouch that everything tastes fresh, from the bread to the sauce to the meat to the fish, and everything in between. But it is another one of his fresh ideas that has Ambrose particularly excited. "If I couldn't find the seasoned staff like we had in Boston," quipped Ambrose, "then what's next these days in France and Europe and even California, is getting young people with no experience. The reason is that with any kid at any level waiting tables in the beginning, this will teach them how to do everything in life. It will teach them how to be comfortable and confident in every walk of life. They will be able to deliver with diplomacy. I wanted to find a way to give back to the community, and I felt that this would be a great way to do so. Guests may have to endure a slightly longer way, but the food will make up for it. During the busiest times, especially Thursday, Friday and Saturday, they even have an on-house wine expert. He is constantly coming up with new menu ideas based on the fresh catches available. Whatever is in season, Ambrose will find a way to make it work on the menu on any given day, from Mako shark to striped bass to blue fish and beyond. Ambrose will create whatever is in his head that day. Thankfully for their patrons, everything that is in Ambrose's head equates to a fantastic dining experience. After also sampling the fried calamari, which uses organic corn meal and flour, which is the same flour that is used in their delicious focaccia bread, I can once again tell you that all of Ambrose's prep work and attention to detail with using only fresh ingredients is evident in every bite! In addition to the central milling method used with the bread, which was once voted as one of the best bread flavors in America, Ambrose insists that Blu Mussel Tavern uses bigger sized squid, which attributes to the tenderness and exquisite taste and texture of the calamari. But the extensive selection goes so much further than the calamari, as Blu Mussel Tavern has something for everyone. From creative salads and Gramma's meatball, to lamb shank and grilled rib eye, Ambrose has ensured that Blu Mussel Tavern has something for every taste. In terms of what you can pair with it, the drink possibilities are endless, with great craft beers and a variety of wineries. The theme of freshness resonates throughout the entire restaurant.
